the basic recipe for the sweet baking mix-
 
for those of you who want specific recipes, they follow these instructions.
 
for those of you who are creative, here is the basic recipe for the sweet baking mix;
 
2 cups of sweet baking mix.
add 1 1/2 teaspoons of baking powder,
i use aluminum free.
add 1/4 teaspoon of sea salt.
mix these dry ingredients with a whisk to get any lumps out.
 
in a separate bowl add:
2 eggs (for a vegan recipe, add 1/2 cup banana)
1/2 cup of butter or unsweetened applesauce or mashed banana.
3/4 cup of milk, almond milk, orange juice or coffee.
 
1 teaspoon of extract, almond or vanilla or lemon/orange zest.
 
mix these wet ingredients with a hand mixer until frothy.
 
mix the dry ingredients with the wet ingredients, blend thoroughly.
 
add 1/2 cup of goodies!! chocolate chips, shredded coconut, sweetened or unsweetened, raisins, dried fruit.
 
blend all together.
 
pour either into 12 cupcake liners in a muffin tin or 8" x 8" cake pan- i spray my pans with a coconut oil spray to prevent sticking.
 
bake at 350 degrees for approx. 20 minutes. check with a toothpick, it will come out clean when done. do not overbake.
