On May 1st, 2013, the big heart baking company become our county's first cottage food operation!
It is very exciting to be a pioneer with this new food act.
What this means is that I am now able to bake from my certified home kitchen!!
I have eaten gluten free for many years now. My grandmother had celiac disease and I have a strong intolerance to gluten.
I have always found that gluten baking mixes and baked goods have been fairly bland and a bit gritty.
I was introduced to almond meal and coconut products last year. Once the weather turned cold and snowy, all I wanted to do was bake!!!
I have spent the last 6 months experimenting with almond and coconut ingredients to create yummy baked goods that are moist and flavorful.
While I didn't intend to become a bakery, I did want to be offer an alternative to the gluten free baking mixes that are out there.
Creating baking mixes using almond and coconut ingredients, simple recipes and an ongoing blog seemed to be the perfect recipe for me.
